Eggs. They are a simple and humble, but beautiful canvas for so many interesting meals. In a house or with a mouse (ha ha…), eggs are a versatile source of never-fail yumminess. Still, it’s easy to get into a slump of preparing eggs the same boring way every time. Here are a few of my favorite creative ways to spice up your everyday egg monotony and take them from boring to spectacular!

The Sunday morning meal that inspired me to write this post was an egg dish that is an all-time favorite of mine. A great way to prepare eggs is in an omelette that oozes creamy gouda cheese and is laden with golden brown potatoes and sauteed onions. Throw some chopped herbs on top and this savory omelette is the perfect way to start the day or end it! Eggs for dinner are the best!

Toad in the Hole is such a fun meal! Here’s how to make it. First, cut a hole in the middle of a piece of bread using a round cookie cutter. Any bread will work. I usually just use whatever whole wheat bread I have around, but I like it best with slices of sourdough. Melt some butter in a pan on the stove then put in the bread. Then, crack an egg in a small bowl, pour the whole egg into the hole in the bread, and cook until the bread is lightly toasted, flip, and cook just until the egg is runny perfection. When you cut into the egg, the bread soaks up the yummy gooey yolk which gushes all over! I saw an awesome way on a cooking show to make this yummy dish for parties or company– use long baguette, cut holes in a line down the bread, and bake the whole thing in the oven. What a great idea!

I love anything Caprese. Sandwiches, salads, you name it- mozzarella, tomato, and basil is a combination that I always enjoy! So, naturally I also love it in eggs. I often make scrambled eggs with shredded mozzarella, diced tomatoes, and fresh basil or even pesto! Pesto is the best. So so good. Always.

Eggs and avocado go really well together. Try an egg over easy on a toasted english muffin with slices of creamy avocado and melted cheddar cheese. This is true sunshine on a sandwich and a delicious way to start the day off right!

Breakfast burritos, while sometimes a bit messy (at least the way I make them… overstuffed and with very unprofessional folding…). I make scrambled eggs with shredded cheddar and stuff my burritos with avocado, refried beans, diced tomatoes, and salsa. You can get really creative with these and throw in whatever veggies and things you have on hand!
