Purple noodles. Magic, color changing purple noodles. What a crazy world we live in! I was thrilled to finally try these mystical magical noodles at Thaimee Box this past week, and they taste even better than they look!
Thaimee Box is a little Thai restaurant in the East Village, with sister restaurants at Ngam around the block, Thaimee Magic in Gansevoort Market, and Thaimee at McCarren in Brooklyn.
Thaimee’s beautiful “Magic Noodles”, otherwise known as “Yum Woon Sen”, are served in a cup stacked high with peanuts, shallots, cherry tomatoes, scallions, mint, and chicken (or shrimp if you prefer), and the whole cup is meant to be spilled over into the bowl and drizzled with the spicy sauce!
Classic Thai angel hair rice vermicelli noodles are turned blue when they’re soaked in a butterfly pea flower tea. Then, when the dressing, a lime sauce with a kick from chili peppers and a bright punch of tangy flavor, is poured on top, the noodles turn purple!!!! The acid from the dressing is what creates the super cool reaction with the blue tea. These noodles are nearly too pretty to eat, but they’re sooo yummy too!

I didn’t realize that it takes a few minutes for the noodles to completely change color, so most of my pics are more on the blue side than purple… They did become more purple a few minutes in, but by then I had made a mess of them and they were no longer photo worthy… Oops. Nonetheless, they were very pretty and very very tasty!
